Back to School BBQ Blog Hop


It's that time of year . . . Back to School!!  And I am joining some other amazing bloggers to bring you our "Back to School BBQ Blog Hop".


As a part of this blog hop, I have two things to share with you today - some easy recipes and a fun giveaway!

Let's start with the recipes.  When I'm in "back to school" mode, cooking is the last thing I want to do when I get home.  So, I found a recipe that I love to make and it's pretty easy - Melt In Your Mouth Chicken. . . . . it really does melt in your mouth!  I do have to say though, I'm not a big fan of chicken and this is one of my favorite recipes!!

Shopping List:
4 boneless chicken breast halves
1 cup mayo
1/2 cup parmesan cheese
1 1/2 teaspoons season salt
1/2 teaspoon ground black pepper
1 teaspoon garlic pepper

Directions
1. Mix mayo, parmesan cheese, and seasonings in a medium bowl.
2.  Spread mixture over both sides of chicken breasts and place in baking dish.
3.  Bake at 375 degrees for 45 minutes.

That's it!  I usually make some fresh green beans or carrots and some fruit to go with it.  Delicious!

Now, I have one more recipe for you and this one is the perfect snack - Chex Mix!  I make it when I need to bring snacks for an event at school or to have for something to snack on during the day, on a road trip, or for a get together.  Everyone seems to love it!  Now I make mine a little different than the regular recipe.  I also make a double batch in my large roasting pan (you know the one you cook a turkey in).  This recipe is for a single batch.  Double it if you need more.

Shopping List:
1 stick of margarine 
5-6 tablespoons of worcestershire sauce
1 1/2 teaspoon season salt
3/4 teaspoon garlic powder
1 /2 teaspoon onion powder
4 cups of Corn Chex
4 cups of Rice Chex
1-2 cups of pretzel sticks

Directions:
1.  Heat oven to 250 degrees.  Melt butter in large pan in the oven.
2.  When butter is melted, remove pan and mix in seasonings and worcestershire sauce.
3.  Stir in pretzels until coated.
4.  Stir in Corn and Rice Chex until coated.
5.  Bake for 1 hour.  Stir every 20 minutes.
6.  Remove from oven and spread on paper towels to cool.
7.  Store in an air tight container.
